Potato

Ingredients:-




          1.One cup corn
          2.5medium seized potato
          3.Oil according to need
          4.One small spoon chat masala
          5.Half table spoon black pepper powder
          6.Half table spoon cumin seed powder
          7.One table spoon small chopped green chilli
          8.One fourth spoon turmeric powder
          9.Salt according to taste
        10.8-10 parcele
        11.One big spoon fresh cream
        12.Cheese cubes according to need
        13.Cherry for Decoration
Method:-
  Peel the potatoes and cut it in to half pieces.Scoop it in between and give it cup shape.Crush the corn with the help of mixture.

Now pour a oil in non stick pan and hot it. Add cumin seed and green chilli in it.Fry it for two minutes.
Add corn paste and scooped part of patato in it and cook it properly.When it will cook than add salt, black pepper and red chilli powder in it.When mixture will cook than add cream in it.

After 3 minutes add grated cheese cubes in it.when cheese melted than  switch off the gas.Mixed the prepared mixture properly.

Now fry the potato cups in hot oil till it will be golden.Take out the cups on tissue paper.Spread masala on it and fill mixture in cups.Decorate it with parcele or cherry.Potato corn cups are prepared. serve it hot.


     
 

Recipes for vada

Kalmi vada:-
           Ingredients:-


                  1.Half cup chana dal
                      2.Half inch piece of ginger [grated]
                      3.Half cup small chopped green chilli
                      4.Salt according to need 
                      5.One foutth small spoon red chilli powder 
                     6.Half small spoon coriander powder 
                     7. Half cup small chopped green coriander leaves
                     8.A pinch of asafoetida  
                
Method:-
             Wash the channa dal and soak it for whole night.Sieve all extra water in the morning.Grind it in the mixture without water.If you feel that dal is dry than add two big spoon water in it.Mix salt,green chilli,ginger paste,coriander powder,red chilli powder,and asafoetida in it.

Now pour oil in pan and heat it.Put cotton cloth on bowl.Wet the upper part of the cloth.Take some mixture of dal and put it on cloth and give it round shape.Deep fry it in hot oil.Prepare all the vada same and deep fry till it is light golden.

Cut long pieces of all the fried vada with the help of knife.When you want to eat vada than fried it again in hot oil till it will be crispy.Vada is prepared.Serve it hot with green chutney or sauce.

Chilli potato

 Ingredients:-
        1.Three potato
        2.One small chopped onion
        3.Six flax of garlic
        4.Two small chopped green chilli
        5.One table spoon ginger paste
        6.Four spoon corn flour powder
        7.Two big spoon tomatosauce
        8.One big spoon soya sauce
        9.Half spoon chilli sauce
      10.Half spoon vinegar
      11.One fourth spoon chilli flax
      12.One spoon small chopped onion
      13.Salt according to taste
      14.Half spoon sugar
Method:-
           Peel the potato and cut it in to long -long pieces.Wrap the potato in corn flour.Wrapping of corn flour on potato should  be properly.

Now heat the oil in pan and fry the  cornflour coated potato in pan.Take out these fried potato on tissue paper.

Pour oil in pan and heat it.Cook garlic in it. Now cook onion in it till they become transparent.Add ginger,green chilli in it and cook it.

Mix soya sauce, chilli sauce and tomato sauce in it .Cook it on slow flame.Mix one table spoon corn flour in half cup water.Cook it on slow flame.Mix salt,sugar,all sauces or fried masala in it.After  two minutes add fried potato in it.

Now add chilli flax and vinegar in it and mix it properly.Take out hot chilli potato in bowl and decorate it with green potato leaves.Chilli potato is prepared.Serve it hot.

missi roti

Ingredients:-




           1.One cup besan
           2.One cup wheat flour
           3.Half cup semolina
           4.Two table spoon oil or ghee
           5.One table spoon dry methi
           6.Salt according to taste
           7.Half table spoon cumin seed powder
           8.Apinch of asafoetida
           9. Half table spoon garam masala
          10.Apinch of turmeric powder
      
Method:-
   Mix all the ingredients together and mix it well.Prepare dough from it.

Keep it aside for half an hour.Make small-samall balls from dough and roll it with roller.Give it chapati shape.

Roast it on non stick tava. Missi roti is prepared.Serve it hot with dal or vegetable.

Poori

Poori:-


      Ingredients:-     
               1.Two cup wheat flour
               2.Three boiled potato
               3.Three fourth spoon red chilli powder 
               4.Two small chopped green chilli
               5.Half cup coriander leaves
               6.Half table spoon garam masala 
               7.Salt accordig to need
               
Method:-

 
    Mash the boiled  potato well.Add red chilli,salt, green chilli,coriander leaves and garam masala in it.Mix it properly.

Now mix all the mixture of potato in wheat flour and mix it well.Prepare a dough from it.

Now make small-small balls from it and roll it with the help of roller with 4" diameter.Deep fry it. Poori is prepared.Serve it hot with pickle.
                       
        

Naan

1.Plain naan
 Ingredients:-
         1.Two cup maida
                    2.One cup curd
                    3.One spoon butter
                    4.One table spoon sugar
                    5.Salt according to taste 
               6. Half table spoon onion seeds 
   Method:-
                 Sieve the maida.Add salt , sugar and melted butter in it.

Mix it well and prepare soft dough from it with the help of curd.Cover it and keep it aside for half an hour.

Make small- small ball from it and roll it with the help of roller.Paste onion seeds on it and cook it in gas tandoor.  

Naan is prepared. Serve it hot with makhani dal. 

2.Paneer stuffed naan 

       Ingredients:-
                      1.One cup grated paneer 
                      2.Salt according to taste 
                      3.Half table spoon red chilli powder 
                      4.Two small chopped green chilli
                      5.One small chopped onion
                      6.One fourth cup small chopped coriander leaves
                      7.Half table spoon dry mango powder 
                      8.One cup maida 
                      9.Two cup wheat flour
                    10.Oil or curd as a moan
                    11.One table spoon curd
 
Method:-
         Sieve the wheat flour or maida both.Mix it properly.Add moan.sugar and salt in it.Prepare dough from it with the help of curd.Keep it aside for half an hour.

Now mix paneer.onion,salt ,red chilli,green chilli,coriander leaves,dry mango powder together and prepare stuffing from it.

Take small-small balls from the dough and roll it with the help of roller.Put stuffing on it.Fold it from the corners and roll it in oval shape.Cook it in oven.Paneer stuff naan is prepared.Serve it hot with dal makhani.

Paratha

1.Mughlai paratha


       
 Ingredients for dough:-
                       1.Half cup wheat flour
                       2.Half cup maida
                       3.Two table spoon oil
                       4.One table spoon salt 
  Ingredients for stuffing:-
                       1.One cup mava
                       2.Half cup paneer
                       3.One cup potato
                       4.Half table spoon chat masala
                       5.One fourth table spoon coriander leaves
                       6.Two small chopped green chilli
                       7. Salt taste wise
                       8.Oil for frying
 Method:-
          Mix wheat flour and maida,salt together and prepare dough from it with the help of Luke water.

         Mix all the ingredients of stuffing together and prepared a stuffing material.

Now take small ball from dough and roll it with the help of roller like a chapati.Fill this chapati from stuffing material and give it to paratha shape.Roll it with roller.

Fry it on non stick tava with the help of oil.Muglai paratha is prepared . Serve it hot with butter.

2.Royal paratha:-
       


  Ingredients for dough:-
                    1.One cup wheat flour
                    2.Half cup maida
                    3.One table spoon oil
                    4.Salt taste wise
                    5.Water
  Ingredients for stuffing:-
                   1.Two cup mava
                   2.Half cup crushed dry fruits
                   3.Two pnch gram flour
                   4.Two tble spoon sugar
                   5.Ghee for frying
   Method:-
           Mix wheat flour, maida,salt and oil together and prepare dough from it with the help of water.

          Mix all the stuffing material in mava.Mix sugar in it.

Now prepare small- small balls from dough.Roll it with the help of roller and give it chapati shape.Fill some stuffing material in it.Give it paratha shape and roll it.

Fry it on non stick tava.Royal paratha is prepared.

3. Onion paratha:-


        Ingredients:-
                     1.Two cup wheat flour
                     2. Two cup small chopped onion
                     3.Two three small chopped green chilli
                     4.Some coriander leaves
                     5.One table spoon kastoori methi
                     6.Salt according to taste
                     7.Half table spoon red chilli powder
                     8.One fourth cup pure ghee
       Method:-
             Mix salt and one spoon ghee,salt in wheat flour and prepare dough from it with the help of water.Take small-small balls from it and prepare chapati from it.

Now mix all chopped vegetables.Mix this vegetables on rolled chapati and spread salt,met-hi and some flour on it.

Now mix all the things on chapati and fold it.Give it to paratha shape.Roll it with the help of roller.Fry it on non stick tava .Onion paratha is prepared.Serve it hot with curd and butter.

4.Potato paratha:-
               
Ingredients:-
                    1.Two cup wheat flour
                    2.Three cup boiled and mashed potato
                    3.Half cup small chopped onion
                    4.Salt according to taste
                    5.Two small chopped green chilli
                    6.One fourth cup ghee
                    7.Half tea spoon carrom seeds
                    8.One table spoon small chopped ginger
Method:-
        Prepare a dough from wheat flour by adding salt and Luke water in it.Make small ball from dough and prepare chapati from it with the help of roller.

Now mix mashed potato,chopped onion,carom seeds,salt,red chilli,powder,chopped green chilli,ginger
together and prepare stuffing material from it.

Now stuff rolled chapati from stuffing material and  roll it with the roller.Roast it with ghee from both the sides on non stick griddle.Paratha of potato is prepared.Serve it hot with butter ,chutney and curd.

5.Pudina paratha 

 Ingredients:-
         1.Two cup wheat flour 
           2.Four table spoon dry /fresh mint
           3.Two table spoon oil
           4.Half table spoon red chilli
 Method:-
         Make dough with wheat flour.Make small-small balls from it
and roll it thin with the help of roller.

Now mix salt,red chilli and mint. Mix it properly and  prepare stuffing material.Place two pinch mixture of mint masala on rolled chapati.Gather the edges of chapati and roll it with the help of roller in to 5-6" diameter.


Roast it with oil from both the sides on non stick griddle till they get golden color. Pudina paratha is prepared.Serve it hot with mango pickle or curd.

6.Paneer paratha 
   Ingredients for dough:-
               1.One cup wheat flour
                  2.One cup maida 
                  3.One table spoon oil
                  4.Salt according to taste
    Ingredients for stuffing:-
               1.Two cup grated paneer 
                  2.One grated onion
                  3.2small chopped green chilli
                  4.Half cup coriander leaves
                  5.Half table spoon grated ginger 
                  6.Half table spoon lemon juice
                  7. Salt according to neeed
                  8.Ghee for frying
Method:-   
      Mix wheat flour,salt,oil,maida  together and prepare dough from it.

Now mix grated paneer,chopped onion,green chilli,ginger lemon juice,salt and coriander leaves together.Prepare stuffing from it.

Take small- small balls from dough and roll it in to small chapati.Spread two table spoon stuffing material on it.Gadges the edges together and roll it with roller 5" diameter.

Roast it with ghee from both the sides on non stick griddle till they get golden color. Paneer paratha is prepared.Serve it hot with makkhan,butter or curd.

7.Punjabi paratha

    Ingredients:-
                  1.Two cup corn atta
                  2.Three boiled potato
                  3.Two small chopped onion
                  4.Two small chopped green chilli
                  5.Salt according to taste
                  6.One fourth cup curd.
                  7.Oil for frying
                  8.Half cup wheat flour
               
Method:-
       Mix all the ingredients together and prepare dough from it.Take small- small balls from the dough and roll it with the help of roller.

Now fry it on non stick tava and serve it hot with chutney or pickles.

8.Green paratha:-



   Ingredients for dough:-
                     1.One cup wheat flour
                     2.One cup maida
                     3.Two table spoon oil
                     4.Salt according to taste
                     5.Water according to need
Ingredients for stuffing:-
                    1.Two cup boiled mater
                    2.One table spoon lemon juice
                    3.Half cup coriander leaves
                    4.One table spoon ginger
                    5.One table spoon garlic
                   6.Salt according to taste
     Method:-
             
              Mix wheat flour,maida,oil and salt together.Prepare dough from it with the help of water.

Now grind mater in mixtue and mix all the ingredients of stuffing and prepare stuffing material.


Take small- small balls from dough.Roll it with roller.Stuff it with stuffing material and close it.

Roll it with roller and give it paratha shape.Fry it on non stick tava. Serve it hot.

vegetables

1.Paneer kofta


 Ingredients for  kofta:-
                    1.Half cup paneer
                    2.Half cup grated bread
                    3.One fourth table spoon chat masala
                    4.Two small chopped green chilli
                    5.Half cup green coriander leaves.
                    6.White gravy or tomato gravy
    Ingredients for white gravy:-
                1.One cup cashew nuts
                2.Half cup magaj
                3.Two cup milk
                4.Half cup mava
                5.Half cup fresh cream
                6.One fourth cup poppy seeds
                7.Masala for gravy according to need          

 Method  for white gravy:-
          Soak cashew nuts.Poppy seeds,magaj for 5 hours.Grind it in to mixture.Pour ghee in pan and heat it .Now add prepared paste in it and masala in it.Cook it till mixture leave the oil.Mix grated mava in it.When it leaves oil than add one cup of milk in it.Add salt and white pepper in it.White gravy is prepared.

  Method for kofta :- 
               Mix all the things together and prepare small- small balls from it.Deep fry it in oil till light pink.Now add all the fried balls in white gravy. Decorate it with coriander leaves.Paneer kofta is prepared. Serve it hot.

2.Paneer in white gravy:-

 Ingredients:-
                1. prepared white gravy
               2.One small chopped onion
               3.Garam masala
               4.Half cup curd
               5.One big spoon ginger paste
               6.one big spoon garlic paste
               7.Half cup corn flour paste with milk
               8.One table spoon cream
               9.Half bowl boiled pea
             10.Salt and black pepper according to taste
             11. One table spoon lemon juice
       
Method:-
         Heat oil in pan .Fry onion in the heated oil Add ginger and garlic paste in it.Now add all garam masala and curd in it.Cook it well. Add paneer pieces in it.Now add salt,black pepper and corn flour paste in it.Add boiled pea and decorate it with green coriander leaves. Vegetable is prepared.Add lemon juice in it.Serve it hot.

3.Govind gatta 


          Ingredients:-
                 1.One bowl gram flour
                 2.Salt according to taste
                 3.Two table spoon kastoori methi
                 4.Half table spoon turmeric powder
                 5.A pinch of asfoetida
                 6.Half table spoon fennel seed
                 7.Half table spoon sodium bi carbonate
                 8.Half table spoon cumin seeds
                 9.One big table spoon oil
               10.Half table spoon musterd seeds
               11.One table spoon fresh cream
               12.Salt according to taste
               13.One table spoon red chilli powder
               14.One table spoon chat masala
               15.One bowl curd
               16.One table spoon lemon juice
               17.Some grated paneer
Method:-
          Mix paneer,salt,black pepper,green chilli,chat masala.and lemon juice together and prepare small- small balls from it.Stuffing balls are prepared.
         Add salt,tempered cumin seeds,mustered seeds,and asfoetida in gram flour and  prepare dough from gram flour.Prepare small balls from it and stuff it with stuffing balls.

Now heat the  oil in pan and put asafoetida,cumin seeds and mustered seeds in it.Fry ginger paste in it.Add green chilli paste ,salt red chilli powder and curd in it.Stir regularly.Add turmeric and garam masala in it.Cook it on slow flame till oil floats on it.Spread coriander leaves on it.Indian recipes of Govind gatta vegetable is prepared..Serve it hot.
         
4.Muglai gobi

           Ingredients:-
                    1.One fourth cup garlic paste
                    2.One fourth cup ginger paste
                    3.Half cup onion paste
                    4.One cup tomato passte
                    5.One fourth table spoon turmeric powder
                    6.Two-three clove
                    7.One piece cinamon
                    8.Two table spoon coriander powder
                    9.One table spoon dry  mango powder
                   10.Oil according to need
                   11.Two table spoon green chilli
                   12. Salt according to taste
                   13.One cauliflower
         
Method:-
       Blanch the cauliflower and boil it  in salted water till soften.
    

Now pour one table spoon oil in pan and add cinnamon and clove in it.Add ginger and garlic paste in it. Cook it till it leaves the pan and add tomato paste in it.Fry it for five minutes.Now add all the spices in it.Cook it till it leaves the oil.Add small quantity of water and cauliflower in it.Cover it and cook it for 5 minutes.Decorate it with paneer and coriander leaves.Easy indian muglai gobi is prepared.Serve it hot.

5.Shahi paneer

          Ingredients:-
                      1.Two cup paneer slices
                      2.Three fourth cup khoya
                      3.One cup milk
                      4.Two cup tomato paste
                      5.Two small chopped green chilli
                      6.Half cup small chopped green coriander leaves
                      7.One table spoon grated ginger
                      8.One small chopped onion
                      9.Salt and red chilli powder according to need
                     10.One piece mace
                     11. Two- three cloves
                  
Method:-
          Pour two table spoon ghee in pan and add clove and mace in it.Fry Onion ,ginger paste in it.When it will be light pink than add tomato paste in it.

Now add salt and red chilli powder in it with mava and milk.Cook it  for 5 minutes.Add paneer pieces in it and cook it for 3-4 minutes.

Spread garam masala and kastoori methi on it.Vegetable of sahi paneer is prepared.Decorate it with fresh cream ,coriander leaves and cashew nuts pieces.

6.Kadai paneer

     Ingredients:-
                           1.One long chopped capsicum
                           2.One long chopped onion                
                           3.Two cup long pieces of paneer
                           4.Two cup tomato paste
                           5.Half cup onion paste
                           6.One fourth cup ginger paste
                           7.One fourth cup garlic paste
                           8.One fourth table spoon crushed onion seeds
                           9.Half table spoon crushed coriander seeds
                          10.One cup fresh cream
                          11.Two cloves
                          13.One piece of cinnamone
                          14.Two table spoon kasoori methi
                          15. Two fried red chilli
   
Method:-
          Pour two table spoon ghee in pan and temper onion and coriander seeds in it.Now fry garlic ,ginger and onion paste in it. Cook it till it leaves the oil.Add tomato paste in it cook it well.

Now add chopped capsicum and onion in it.When it leaves the pan than add paneer pieces with kasoori methi,salt or red chilli powder.Fry it for 5 minutes. 

Indian food kadahi paneer is ready.At the time of serving decorate it with red chilli or green coriander leaves.                       
       

                      

       

Sweets

1.Angoori roll
                
          Ingredients:-
                   1.Two sup khoya
                   2.One cup grated meetha petha
                   3.8-10soaked,peeled,small chopped almonads
                  
Method:-    

             
Mix all the ingredients together.Keep it in freezer for half an hour.Prepare this mixture like kaju roll.Wrap it in silver varq.Garnish it with saffron thread sand serve it cold .Angoori roll is prepared.


2.Chocolate mava roll
                 
           
Ingredients:-
                      1.One and half kg mava
                      2.Two table spoon grated sugar
                      3.Half cup grated chocolate biscuit
                      4.Two table spoon fresh cream
                      5.Plastic sheet
                    
Method:-
       Mix mava and grated sugar well.Roll it in plastic sheet with the help of roller.Keep it aside.
Now prepare dough from grated biscuit,cream with the help of milk.Roll it on plastic sheet with the help of roller.

Now keep mava roti on chocolate roti.Roll it in plastic sheet and tie it with rubber band from both the corners.Keep it in freezer for half an hour.Leave the plastic sheet and wrap varq on it.

Cut it like a pin wheel biscuit. Chocolate mava roll recipe of Indian dessert
is prepared.Serve it .

3.Chocolate fudge:-
            
         
 Ingredients:-
                     1.Half tin milk maid
                     2.One cup milk powder
                     3.One cup cream
                     4.Half cup butter
                     5.Half cup akrot
                     6.Half cup kaju
                     7.Half cup raisins {kishmis}
                     8.Two table spoon cocopowder
                   
Method:-
          Heat butter in pan.When butter has been melted than add milk maid,milk powder,coco powder and cream in it. Stir it regularly and add all dry fruits in it.stir it regularly till mixture leave the corners of the pan.Now pour it i in greased plate.Let it cool and cut it in to square pieces.Chocolate fudge is prepared. Serve it.

Soup

When we are preparing any kind of soup than we need stock.for preparing stock we can use any kind of vegetables except lady finger or arbi.

Method for vegetable  stock:-

                            Mix all the vegetables and boil it well. Mash it properly with masher.Sieve it with siever. Sieved vegetable water is called vegetable stock.

1.Sweet corn soup:-
                
             Ingredients:-
                        1. One cup fresh white mecca
                        2.One table spoon vinegar
                        3.Four cup vegetable stock
                        4.One fourth table spoon white pepper
                        5.Half table spoon salt
                        6.One table spoon green chilli paste
                        7.Two three table spoon corn flour paste
                        8.One fourth table spoon ajino motto
                        9.Soya sauce for serving
                      10.Green chilli sauce for serving
                      11.Green chilli deeped in vinegar
                     
Method:-
          Boil sweet corn and vegetable stock for three to five minutes.Now add ajinomotto,white pepper,and salt in it.Boil it.Take some plain water and mix corn flour in it and add small-small quantity of corn flour in boiled soup.Stir it regularly.Boil it for two minutes.

Decorate it with small chopped vegetables. Serve it hot on serving table. 

2.Sweet corn vegetable soup
                 
     Ingredients:-
          1.Half cup small chopped carrot
          2.Half cup small chopped cauliflower 
          3.Half cup small chopped cabbage
          4.Half cup small chopped french beans
          5.Prepared sweet corn soup
   Method:-

                             Boil all the vegetables in water and wash it in cold water well.Now add all washed vegetables in boiled sweet corn soup.We can add one spoon vegetable in one cup sweet corn soup.Serve it hot with all the sauces.  

3.Sweet and sour soup 

        Ingredients:-
       1.Two cup vegetable stock
            2.Two table spoon sweet corn
            3.Half cup fresh vegetables
            4.One table spoon paneer 
            5.Half table spoon coriander leaves
            6.One table spoon soya sauce
            7.Two flax of garlic
            8.One table spoon vinegar
            9.Two table spoon green chilli sace
           10.Half table spoon salt
           12.One fourth table spoon white pepper
           13.Two table spoon corn flour
           14.One table spoon butter 
            15.Half table spoon ajino motto
      Method:-
               Melt one table spoon butter in pan.Add ginger and garlic paste in it . fry it for two minutes.Now mix all chopped vegetableas in it.Cook it for two minutes.

Now add four cup vegetable stock in it.Boil it for two minutes.Mix corn flour in water and add small-small quantity of corn flour in boiled soup.Mix all the ingredients in it except coriander leaves.Serve it hot.Decorate it with coriander leaves.
   
  4.Tomato soup:-

 Ingredients:-
                   1.Half kg tomato
                   2.Two cup vegetable stock
                   3.Two table spoon butter
                   4.One spoon maida
                   5.One table spoon ginger paste 
                   6.Salt and suga according to taste 
                   7.Black pepper powderand rock salt according to need
                   8.Half chopped onion
                   9.One spoon oil
                  10.One big spoon oil
                 11.Two spoon butter or ghee
                 12.Cumin seed powder
Method:-
      
  Boil half kg tomato with  salt.Sieve it with siever.

Now add butter in pan.Cook maida in it.Mix sieved paste in it till paste  will thick.mix sugar,cumin seed powder,salt ,black pepper in it.

At the time of serving spread coriander leaves or fried bread slices on soup.Tomato soup is prepared.
